I love having a few easy dinner recipes up my sleeve.  You know the ones you can whip up fast, that don't have a million ingredients or steps and still taste GREAT?

This one is SO simple and uses just 3 ingredients (well 2 more if you count S+P) that are typically in your fridge already.  

Wash, pat dry salmon fillets.  Place a piece of parchment paper on a cookie sheet and evenly spread out the salmon.  Sprinkle a bit of S + P on fillets. Using a tablespoon from your cutlery drawer plop a spoonful of Dijon mustard on each fillet.  Use same spoon to evenly spread out the mustard so the fillet top is all covered.  Then sprinkle dried dill on top.  I like a healthy coating.  Place 2 thin slices of lemon on top.  Bake at 400 degrees for 12-17 minutes depending on the thickness of your fillet and how well you like your salmon. 

I serve this with jasmine rice and a salad or veg.  Enjoy!
